Strawberry Concentrate

Hello my lovelies!

Let’s get back to 3 recipes per week after a few busy days…

Today I will introduce my strawberry concentrate!!

It is still time to enjoy what summer can provide to us, and by this, I mean super sweet strawberries!! This concentrate will be used as a sauce or in several other recipes such as:

– my lime and strawberry cheesecake

– cream cheese or plain yoghurt

– red fruit tiramisu

– with a rhubarb compote

And many others…

You can prepare this recipe with frozen strawberries if you don’t have any fresh ones or set aside in your freezer portions of strawberry concentrate ready for future use.

One last remark before moving on to the recipe: using gelatine sheets isn’t mandatory. It will depend on how you intend to use your strawberry concentrate.

Strawberry Concentrate

Cooking Time: 30 min

Ingredients

  • 250 g strawberries
  • 1/2 lime
  • 100 g sugar
  • 1 gelatine sheet (optional)

Instructions

Place the strawberries cut in halfs in a bowl with 50 g sugar, 1/2 lime zest and juice.

After 20 minutes, heat with 50 g of sugar. Let cook at medium heat for 5-6 minutes.

Place the gelatine sheet in cold water so that it softens.

Mix the fruits and cook again 2-3 minutes.

Remove from the heat, add the drained gelatine sheet. Mix until dissolution.

Set aside in the fridge until use.

    bonjour Emma, cette recette me donne bien envie mais pourquoi mettre la feuille de gélatine, qu’est ce qu’elle apporte ? une texture plus solide ? avec cette feuille conserve t on l’aspect coulis ?

      Bonjour Priscille !
      La feuille de gélatine est là pour une texture plus compacte. En particulier si vous voulez recouvrir un cheesecake par exemple ou un entremet.
      Mais ce n’est pas indispensable pour une autre utilisation (comme un coulis par exemple). Essayez cette recette, c’est très frais !

        Merci infiniment Emma, je suis en train de le faire, mais effectivement je ne vais pas mettre de gélatine, car on va le prendre sur une glace à la vanille, avec qq meringues…
