Shortbread Pastry

When Baking, pastry is often a key element. Shape, color, taste are things you don’t want to fail. For each pie there is an adequate pastry.  Today I will guide you through a super easy recipe of shortbread pastry. You can easily make it with any kind of food processor (Thermomix, Kenwood, Kitchen Aid) or by hand if you feel like it !!!

You can the bake it right away or keep it in your fridge or your freezer.

  • 250 g plain flour
  • 130 g unsalted butter at room temperature
  • 1 pinch of salt
  • 85 g iced sugar
  • 2,5 cl milk
  • 2 egg yolks (approx 40 g)



If you use your Thermomix machine, put all the ingredients in the bowl and mix 20 seconds at speed 6. You can use your spatula to ease mixing.


If you use any other kind of food processor, put first the flour, salt and sugar.


Cube the butter and mix medium speed until it resembles breadcrumbs.


Add the egg yolks and the milk until it comes together.


If you keep your pastry in the fridge, wrap it in clingfilm to avoid any drying.


For immediate and easy roll out, place it between 2 sheets of baking paper.


Enjoy !


For a salted version, remove the sugar from the ingredient list and add 1/2 teaspoon salt.

      2,5 cl c’est 25 g … Si vous avez mis 25 cl ou 2,5 dl … c’est 10 fois plus … Je pense que le souci vient de là …
