So this recipe is really, really indulgent, I’m warning you… Be careful, you might get hooked and the chocolate addiction won’t be far off… 😉 I’m joking of course, but that doesn’t take away from the deep deliciousness of my soft chocolate Nutella muffins without eggs.

But we’re not so fond of overly ripe bananas, even less so when they’re very, very ripe. And that’s where the no-waste side of my soft chocolate Nutella muffins without eggs comes in. Alright, now that that’s said, I need to tell you two things.
The first concerns the sugar. Here I use a mix of brown sugar and light brown sugar. This is mainly for texture reasons. If you don’t have one or the other (or both!), just use regular granulated sugar. Your soft chocolate Nutella muffins without eggs will still be delicious.
Second, I have a recommendation regarding your oven. And this tip applies to any muffin recipe. To get nicely domed muffins with a symmetrical shape (and avoid wonky ones!), set your oven to traditional or static mode. Avoid fan-forced heat. Also, place your muffin tray in the lower part of the oven. You’ll see… it makes all the difference!
A word about Nutella
I know that even mentioning this brand can spark a lot of reactions. First of all, when I say Nutella, I mean chocolate spread. Other brands will work just fine. Your homemade spread too.
That said, I admit it’s the brand I always have at home. My kids really like it and eat it in moderation. That, for me, is the key point. After that, everyone is free to do what feels right… 😉

Chocolate Nutella Muffins Without Eggs
Ingredients
- 165 g flour
- 7 g baking powder
- 1/2 teaspoon fleur de sel
- 3 tablespoons cocoa powder
- 1 very ripe banana
- 60 g light brown sugar
- 60 g dark brown sugar
- 100 g milk
- 90 g vegetable oil (sunflower or canola)
- 1 teaspoon liquid vanilla extract
- 2 tablespoons Nutella
Instructions
Preheat your oven to 200 degrees in static heat mode.
Mix the flour, baking powder, cocoa powder, and salt.
Mash the banana in your mixing bowl.
Add the milk, oil, light brown sugar, dark brown sugar, and vanilla. Mix well.
Finally, add the dry ingredients (flour, baking powder, cocoa, salt) and mix until the batter is smooth.
Pour the batter into your muffin molds.
Pipe the Nutella into the center of the muffins.
Bake in the lower part of the oven for 18 minutes.
