I’ve focused on offering you a seasonal wreath with festive and delicious colors. Of course, you can adapt this recipe-idea with different toppings. In summer, you could make a sunny version with cherry tomatoes, mozzarella balls, and fresh basil leaves, for example.

My Christmas appetizer wreath includes mini chorizo gougères, seasoned fresh goat cheese balls, a few cubes of Mimolette, and some grapes I found in the fridge.

My tip

For visual impact, having a wreath base as support works best. But if you don’t have one, just place a pastry ring on your serving plate and arrange your ingredients around it—it’ll act as a guide. 😉

Christmas Appetizer Wreath

Ingredients

  • Gougères
  • 85 g of eggs
  • 48 g of milk
  • 48 g of water
  • 48 g of butter
  • 54 g of flour
  • 40 g of chorizo
  • 50 g of grated Gruyère
  • 4 g of salt
  • 2 g of sugar
  • Cheese balls
  • 150 g of fresh goat cheese
  • 1 tablespoon of golden sesame seeds
  • 1/2 teaspoon of paprika
  • 1/4 teaspoon of ground ginger
  • Final decoration
  • 150 g of mimolette cubes
  • Fruits or vegetables of your choice
  • Sprigs of dill, bay leaves, or rosemary

Instructions

Preheat the oven to 160°C (320°F).

Heat a saucepan with the mixture of water, milk, butter, and 4 pieces of chorizo. Stop heating once the butter has melted and let infuse for 10 minutes.

Remove the 4 chorizo chunks, then bring the liquid to a boil.

Lower the heat to low and add the sifted flour, sugar, and salt all at once. Mix vigorously with a spatula until a dough forms.

Continue stirring on the stove for 2 minutes, making sure the dough doesn’t stick.

Remove from heat and add one egg. Mix with a whisk until smooth and fully incorporated.

Add the second egg and mix again. The dough should be smooth and homogeneous.

Fold in the grated cheese and the chorizo cut into brunoise.

Transfer the dough to a piping bag and pipe small choux balls about 1.5?cm in diameter onto a baking sheet.

Bake for 25 minutes (5 to 10 minutes more if you’re making larger gougères), and do not open the oven door during baking.

Cool the gougères on a wire rack.

Cheese Balls

In a small bowl, mix the sesame seeds, paprika, and ground ginger.

Form cheese balls by scooping about a teaspoon of goat cheese and rolling it between your palms.

Roll each cheese ball in the spice-seed mixture.

Final Decoration

Arrange the dill sprigs in a wreath shape.

Place the gougères, cheese balls, mimolette cubes, and your selected fruits or vegetables on top.
