Green Tomato Fritters

I’m back with a new recipe, seasonal and perfectly fitting in the “zero waste” category.

Here are my green tomato fritters.

My “garden” tips

If you’re like me and have a vegetable garden, you probably enjoyed delicious red tomatoes, full of sunshine all summer long. We’re lucky, aren’t we? But at the start of autumn, we often find ourselves with beautiful… green tomatoes!

Usually, I pick them and place them in a crate with some apples. Apples release ethylene, which speeds up the ripening of the tomatoes. You won’t get the same taste as those amazing summer tomatoes, but it’s still a good option.

Cooking green tomatoes

Another idea is to cook them and make green tomato fritters! It’s simple, budget-friendly, and quick to make. Tempted? Let’s be honest, this prep isn’t going to magically turn your green tomatoes into red-tomato flavor. But it’s still really tasty!

My secret for perfect green tomato fritters

The secret to making these green tomato fritters super tasty: serve them with a yogurt sauce. You’ve got two options here: either take a yogurt (Greek for me) and add a teaspoon of tahini (white sesame paste), a few sprigs of chopped chives, and a small grated garlic clove. If you’re not into garlic’s strong flavor, skip it. Or, take your yogurt, mix in a teaspoon of mustard, and your finely chopped herbs. And there you have it—your green tomato fritters will be next level!

Enjoy them however you like

At my place, we love these! As a starter, for an appetizer, or as a main dish for dinner—we just share them, eat with our hands, and dip in the sauce. It’s totally nostalgic, this stuff! 😉

Essential utensils:

A good paring knife,

A cutting board,

3 shallow plates,

A fork

And a large skillet.

Green Tomato Fritters

Ingredients

  • 4 large green tomatoes
  • 2 eggs
  • 2 tablespoons of milk
  • 6 tablespoons of breadcrumbs
  • 4 tablespoons of flour
  • 1 tablespoon of cornstarch (Maizena)
  • 1/4 teaspoon of paprika
  • 1/4 teaspoon of ground cumin
  • Salt
  • Pepper
  • Sunflower oil

Instructions

Cut your tomatoes into fairly thick slices (1–1.5 cm). Set aside.

Beat the eggs in a deep plate, add the milk, and mix.

In another deep plate, combine the flour, cornstarch, paprika, cumin, salt, and pepper. Mix well.

Place the breadcrumbs in a third deep plate.

Heat the oil in a frying pan.

Take a slice of tomato, coat it in the flour mixture, then in the egg mixture, and finally in the breadcrumbs.

Fry on each side until nicely golden. Set aside on paper towels.

Repeat with all your tomato slices.
