Today, I’m sharing my pistachio and raspberry financiers.
Pistachio and raspberry financiers, a guaranteed hit!
My batch disappeared faster than you can say it, it was a real tidal wave!! From my husband to my third child, it was a total success! A melt-in-your-mouth softness, a slightly crispy crust, and the sweet-tart flavor of raspberry conquered our gourmand taste buds!! Needless to say, these pistachio and raspberry financiers have already been made again…
My tip to never fail your piping again
But this recipe I’m sharing today has an extra that my other recipes don’t: it will let you try the famous Tube from De Buyer. No more piping bag struggles for beginners, no more messy filling, and hello to ease!! Super practical filling, no mixture wasted, even piping thanks to the handle, varied nozzles, and the possibility to put hot preparations (think about how tricky it is sometimes to fill verrines, now you have the solution!!).
My passion for pistachio
Pistachio is a delicious little nut, known not only for its unique flavor but also for its many nutritional benefits. Originating from the Middle East, it is now appreciated worldwide, whether as a snack, in desserts, or even in savory dishes.

I also really (really) love raspberries
Raspberry, this little bright red fruit with a sweet and tangy flavor, is much more than just a summer treat. It’s packed with health benefits and deserves a special place in our diet.
Originating from temperate regions, raspberries are rich in vitamins, especially vitamin C, which plays a key role in strengthening the immune system and protecting against infections. Their fiber content promotes healthy digestion and helps regulate intestinal transit.
This small fruit is also an excellent source of antioxidants, such as flavonoids and anthocyanins, which protect cells against oxidative stress, responsible for premature aging and some chronic diseases like cardiovascular illnesses. The antioxidants in raspberries also help reduce inflammation in the body.

Now, let’s get back to our pistachio and raspberry financiers recipe!
You will need pistachio powder. It’s not always easy to find. You can simply take whole pistachios, shelled and unsalted. Grind them in a blender (or hand blender or Thermomix) and voilà! Pistachio packets often weigh 125g; you can complete up to 150g (the amount needed for the recipe) with 25g of almond powder.
The necessary utensils are:
My financier molds (Elastomoules De Buyer… you know them well ;-)),
A large mixing bowl,
A whisk (electric or not),
The Tube to make filling the molds easier,
And a spatula.

Alright, I think we can get started…
The recipe, Chef!
Pistachio and Raspberry Financiers
Ingredients
- 250 g of powdered sugar
- 150 g of pistachio powder
- 75 g of flour
- 6 egg whites or about 220 g
- 150 g of salted butter or unsalted butter (in this case, add 1/2 teaspoon of fleur de sel)
- 30 raspberries
Instructions
Preheat your oven to 170 degrees Celsius.
Melt the butter gently in a saucepan and set aside.
Put the dry ingredients (powdered sugar, pistachio powder, flour) into a bowl.
Gradually add the egg whites while whisking.
When the mixture is smooth, slowly pour in the melted butter while whisking again.
Pour the batter into your financier molds.
Place 2 raspberries on each financier, pressing them in slightly.
Bake for about 20 minutes (check doneness by inserting a wooden skewer).
Let cool slightly before unmolding.
