Potato and Sardine Salad

In Alsace, potatoes are sacred!! 😉 And so, we have the best potato salad in the world! (I’m not exaggerating…)

And yet, here I am offering you another version: potato and sardine salad.

A quick and easy recipe

And I have to admit, it’s pretty great too…

This recipe is very simple, quick to prepare, and makes a complete meal. You can also serve this potato and sardine salad as a starter.

3 key ingredients for this potato and sardine salad

This dish revolves around three main ingredients:

– potatoes, obviously…

I recommend using a variety that holds up well to steaming, such as Amandine. You could also go with Roseval (red-skinned).

Pick a type that stays firm when cooked and is easy to peel.

– sardines in oil:

I used sardines from Conserverie Parmentier — really tasty. You could also go for tuna in oil, anchovies, or mackerel.

Whatever you choose, don’t overlook this ingredient. Its flavor is key in this recipe…

– the egg:

It’s poached in boiling vinegar water. Once the water and vinegar are boiling, stir a whirlpool in the center with the handle of a fork, then drop the egg (without the shell) in all at once. The swirling motion helps the egg take a nice round shape and a smooth surface.

Follow this tip and you can’t go wrong!

The result

Potato and Sardine Salad

Ingredients

  • 3 large Amandine potatoes
  • 1 can of sardines in oil
  • 1 fresh white onion
  • 3 eggs
  • 3 tablespoons of vinegar
  • 15 Greek black olives
  • Herbs (parsley, coriander, chives)
  • Olive oil
  • Fleur de sel
  • Pepper

Instructions

Peel and steam your potatoes (or boil them with the skin on) for 20 minutes.

Once cooked, slice them and arrange on your plates.

Poach your eggs one at a time in boiling vinegar water for 2 minutes and 30 seconds.

Once done, place them on your plates.

Add 5 olives per plate, finely chopped onion, herbs, a sardine, and a drizzle of olive oil.

Season with fleur de sel and pepper.
