One child needs your help with homework, the other just told you their sports gear is dirty and they need it for tomorrow. In short, you’re not done yet! And dinner?? It’s going to have to be quick, efficient, and delicious!

As you might’ve guessed, this recipe is kind of my go-to for moms on the verge of a breakdown!! 😉

This crustless quiche with green asparagus and cured ham is going to save your evening, and not just once! If I told you it’s delicious (yes, that’s the bare minimum for a food blog…), ready in 10 minutes flat (yes, I promise!), and relatively healthy (that matters too), would you sign at the bottom of the page??

The benefits of green asparagus

With the arrival of spring, green asparagus makes a big comeback on market stalls. This delicate vegetable, recognizable by its thin stalk and slightly purple tip, is not only tasty but also excellent for your health.

Low in calories (about 20 kcal per 100 g), green asparagus is rich in fiber, promoting good digestion and helping you feel full. It’s also a great source of vitamins: vitamin K (essential for blood clotting), vitamin C (an antioxidant), and especially vitamin B9 or folate, vital for pregnant women as it supports healthy fetal development.

As for minerals, asparagus is particularly interesting for its potassium content, which helps regulate blood pressure, as well as its iron and magnesium levels. Thanks to their diuretic properties, asparagus also helps flush out toxins and fight water retention.

Another benefit: they contain asparagine, a natural amino acid that stimulates kidney function. And because they’re rich in antioxidants, asparagus helps combat cellular aging.

In the kitchen, they’re super simple to prepare: just a few minutes steamed or sautéed is enough to keep their crunch. In salads, risottos, or simply paired with a drizzle of olive oil and lemon, green asparagus is a true springtime delight to enjoy without restraint. A versatile recipe

Oh and I almost forgot… My crustless quiche with green asparagus and cured ham can be endlessly adapted!! Zucchini instead of asparagus, some leftover cooked salmon from the fridge instead of the cured ham, smoked salmon for a fancier version (perfect for serving as a starter for guests), chunks of cheese (goat cheese works great here)… I’ll stop now or I could go on forever!

Crustless Quiche with Green Asparagus and Cured Ham

Ingredients

  • 5-6 green asparagus
  • 1 tablespoon of olive oil
  • 100 g of milk
  • 100 g of cream
  • 40 g of flour (or cornstarch)
  • 2 medium eggs
  • 50 g of grated Gruyère cheese
  • Salt
  • Pepper
  • Nutmeg
  • 4 thin slices of cured ham

Instructions

Preheat your oven to 200 degrees.

Trim the tough ends off the asparagus and sauté them for 5 minutes in a pan with olive oil and a pinch of salt. Set aside.

Mix the milk and flour.

Then add the cream, followed by the eggs. Mix well.

Add the grated Gruyère cheese.

Season with salt, pepper, and nutmeg.

Pour the mixture into your well-buttered mold.

Add the asparagus and ham.

Bake for about 20 minutes.
