I’m definitely a fan of spring and all the flavors that come back to our tables… Today, I’m sharing an ultra-indulgent vegetarian recipe.

It was about time I added a new savory recipe! Let me tell you more about my cherry tomato Tarte Tatin… First, we’ll prepare a puff pastry. I really recommend making your own puff pastry. There are few ingredients in this recipe, so it’s important they’re all high quality. You can choose either my quick puff pastry (used here), which has a nice buttery flavor and is ready quickly, or the more traditional recipe, which is even better but requires several steps and resting times.

A really simple recipe

Then we’ll make a caramel deglazed with wine vinegar that brings a balance of sweetness and tanginess to your cherry tomato Tarte Tatin. And that’s it. This recipe is truly simple to make and tastes absolutely amazing. Cherry tomatoes confit in caramel—love it!

Don’t miss this important tip

One last note: depending on the quality and variety of your cherry tomatoes, you might have a lot of juice in your pan at the end of baking. To avoid soggy pastry and a disaster when unmolding, I suggest tilting your pan while gently pressing on the pastry to drain the juice into a container. You can then serve this juice as a sauce on the cherry tomato Tarte Tatin, letting everyone drizzle it on their plate. It would be a shame to waste it because it’s super tasty! 😉

A stand mixer (or a large bowl),

A saucepan,

A spatula,

A good paring knife,

And a 23 cm Tatin pan.

Cherry Tomato Tarte Tatin

Ingredients

  • Quick Puff Pastry
  • 200 g of all-purpose flour (T45 or T55)
  • 200 g of very cold butter
  • 1/2 teaspoon of salt
  • 100 g of very cold water
  • Caramel
  • 100 g of brown sugar
  • 30 g of butter
  • 3 tablespoons of balsamic vinegar
  • Topping
  • 600 g of cherry tomatoes
  • A few basil leaves (optional)

Instructions

Quick Puff Pastry

Place the flour, cubed butter, and salt in the bowl of your stand mixer (or in a large mixing bowl).

Start mixing and slowly pour in the water.

Mix until the flour is incorporated but there are still large chunks of butter.

Place the dough on a floured surface.

Flatten the dough with a rolling pin to form a rectangle about 15 cm by 45 cm.

Fold the right third of the dough over the center, then fold the left third over to create a square.

Turn the dough a quarter turn. Roll it out again into a rectangle (about 15 cm by 45 cm), and fold the right third, then the left third once more.

Repeat this process two more times.

Wrap the dough in plastic wrap and refrigerate.

Caramel

Pour the brown sugar into your saucepan.

Cook over medium-high heat to make a caramel.

Deglaze with the vinegar, then add the butter. Mix well and pour into your Tatin pan.

Final Steps

Preheat your oven to 190°C (375°F).

Arrange the cherry tomatoes in the pan.

Roll out your puff pastry and cut a disk of dough using a sharp knife.

Cover the tomatoes with the pastry.

Bake for 30 to 35 minutes.

Once out of the oven, wait 5 minutes, then invert the cherry tomato Tatin onto a plate.
