So, after the capons, the foie gras, the Yule log, the galette, and the crepes, we’re now entering donut and other fried treats season!!

Long live culinary traditions!! I love it so much!!

Today, we’re going to be indulgent but still reasonable with my oven baked donuts.

The origin of this oven baked donut recipe

You already have the traditional fried donut recipe on the blog. Here, I developed this recipe for my partner De Buyer, so you can also find it on their website… 😉 It’s perfectly suited for mini-savarins molds that, in addition to providing a great bake, will give you perfectly round and even baked donuts.

If you don’t have such molds, two options are available: rush to treat yourself with a high-quality De Buyer mold for under 15 euros, or make the recipe without a mold by placing your donuts on a baking mat or a baking sheet with parchment paper.

As for the recipe, nothing too difficult. We’re using a yeast dough, so you’ll need to allow time for two rises. That’s a must. Make sure to follow this instruction before you start.

A recipe that makes life easier

Otherwise, it will be great to enjoy these baked donuts since we won’t have the dreaded frying smells that often put us off making this type of recipe. Also, no need to clean the fryer, my nightmare… Goodbye to the grease from frying… Even though, I must admit, that’s what gives a lot of the delightful taste.

Of course, you can make fritters instead of donuts if you prefer that shape…

Ingredients

  • 360 g of T55 flour (or T45)
  • 20 g of granulated sugar
  • 40 g of brown sugar
  • 170 g of whole milk
  • 6 g of dry yeast or 15 g of fresh yeast
  • 1 large egg
  • 20 g of sunflower oil
  • 40 g of butter at room temperature
  • 1 pinch of salt

Instructions

Warm the milk and add the yeast. Let it sit for a minute, then mix well.

Whisk together the egg, sugar, and brown sugar.

Add the flour, salt, butter, oil, and the egg/sugar mixture into the bowl of your stand mixer.

Start kneading at low speed and slowly pour in the milk.

Once the dough is smooth, gradually increase the kneading speed. Knead for 5 to 7 minutes.

Cover the bowl with a clean, damp cloth. Let it rise for about 2 hours.

At the end of the first rise, punch down the dough and divide it into 24 pieces.

Shape them into balls first, then into rings by making a hole with your finger in the center of each ball.

Place your rings into your greased donut molds.

Let them rise again for 45 minutes.

Preheat your oven to 180°C (fan oven).

Bake your donuts for about 10-11 minutes. (Insert a knife or small skewer to check if they’re fully cooked.)
