Honey and Coriander Pork Filet Mignon

I’m thrilled because I’m about to share with you a recipe that I’ve been cooking for years with tremendous success each time…

Here is my honey and coriander pork filet mignon.

So as I said, I’ve been making this recipe for a long time now but I recently made a few adjustments, just what was necessary to share it with you: and that’s making the cooking better.

I cook this honey and coriander pork filet mignon at low temperature and that changes everything!

Before I used to cook it enterely in my frying pan or in the oven at 180 degrees. It was good, I won’t say it was not. But depending on the quality of the meat, on how I dealt with the heat or the cooking time, it happended a few times that it was too cooked. And with pork filet mignon it’s really a shame.

This meat is absolutely amazing when properly cooked, pink inside and juicy. This is why a low temperature slow cooking is the perfect solution here. The meat will be juicy and super smooth.

And with my honey and coriander sauce on top, it will be delightful!! So you might argue: have you seen the amount of honey and butter???? True… This dish is rich. But once in a while, it’s okay don’t you agree? 😉

I suggest to leave the coriander seeds in the sauce while cooking to get as much taste as possible. If you don’t like it, just remove them before pouring the sauce on the meat. If you don’t have coriander seeds, add one more teaspoon of ground coriander.

This dish is great with homemade mashed potatoes or veggies like green beans, fennel…

The utensils:

A large frying pan (I take my Mineral B by De Buyer from the box Steaklover),

A small sauce pan with thick bottom (if possible)

And an oven dish.

Honey and Coriander Pork Filet Mignon

Ingredients

  • 2 pork filet mignon
  • 3 tablespoons honey
  • 50 g butter
  • 1 tablespoon olive oil
  • 1 tablespoon coriander seeds
  • 1 teaspoon ground coriander
  • 1 teaspoon ground ginger
  • A few fresh coriander leaves
  • Salt
  • Pepper

Instructions

Salt the pork filet mignon and stir fry with the olive oil. They should get golden on each side.

Place in an oven dish.

Preheat your oven at 80-90 degrees.

Pour 1/2 glass of water(10 cl) in your frying pan and set aside.

Melt the butter and honey at low temperature in a sauce pan.

Add the meat juice, coriander seeds and ground coriander, ground ginger. Cook at low heat 3-4 minutes.

Pour on the filet mignons, add the coriander leaves and pepper.

Cook for 1 hour.

Notes

If you have a food thermometer culinaire, the center of the filet mignon should reach 63 degrees.

    puis je les préparer le matin et les mettre au four au moment de l’apéritif ?

    Encore une recette compliquée et bof ? Nous nous sommes régalés malgré l’absence de coriandre. A refaire avec cette fois-ci la coriandre. Effectivement la cuisson basse température est incontournable pour ce genre de viande. Merci ??
