Chocolate and Almond Christmas Cookies

We are entering the Christmas season, one of my favorite time of the year! And if I say Christmas, I also say cookies!

Today we’re making chocolate and almond Christmas cookies.

Chocolate and Almond Christmas Cookies

Ingredients

  • 225 g butter at room temperature
  • 75 g icing sugar
  • 300 g flour
  • 150 g ground almond
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1 egg
  • 1 egg yolk
  • 220 g milk chocolate
  • 8 tbsp decorations

Instructions

Combine the butter and sugar until smooth.

Add the flour, salt, ground and vanilla extract. Combine until crumbly.

Add the egg and the egg yolk. Combine.

Once homogeneous, place in a cling film and set aside in your fridge for at least 2 hours.

After such time, preheat your oven at 160 C / 320 F degrees.

Spread the pastry with 3 mm thickness, shape 6 cm diameter discs and place them on a baking mat.

Bake 15 minutes and let cool down on a rack.

Once cold, melt the chocolate.

Soak partially the cookies in the melted chocolate, place them on a parchment paper and spread the decorations.

Let the chocolate harden before serving.

    bonjour, est-ce que je peux faire ces gateaux 1 semaine à l’avance, ou est-ce que vous me conseillez d’autres recettes ?
