I’m definitely in a pistachio mood lately! So you won’t be surprised that today’s recipe is pistachio financiers with raspberry !

Pistachio Financiers with Raspberry
- 250 g iced sugar
- 150 g ground pistachios
- 75 g flour
- 6 egg whites or 220 g
- 150 g salted butter or unsalted butter (in this case add 1 teaspoon of flower salt)
- 30 raspberries
Preheat your oven at 170 C / 340 F degrees.
Melt the butter in a sauce pan at low heat. Set aside.
Pour the powders (sugar, pistachio, flour) in a bowl.
Start whisking and add, little by little, the egg whites.
When you get an homogeneous mixture, add the butter. Whisk.
Pour the batter in your financier molds.
Place 2 raspberries per financier, press the raspberry a little bit into the batter.
Bake 20 minutes (check cooking with a small wooden stick).
Let cool down a bit before unmolding.
