Ingredients

  • Crust
  • 50 g butter
  • 100 g Graham crackers (or Speculoos biscuits)
  • 1/2 tbsp unsweetened cocoa
  • Batter
  • 1/2 tsp vanilla extract
  • 300 g cream cheese
  • 40 g brown sugar
  • 20 g sugar
  • 150 g liquid cream
  • 75 g dark chocolate
  • 55 g milk chocolate
  • 55 g white chocolate

Instructions

Crust

Crush your graham crackers or Speculoos with a rolling pin until very fine crumbs form.

Pour crumbs into a bowl and add the melted butter and cocoa, and stir until well combined.

Press flat the crumb mixture into a springform pan. Chill crust in your fridge.

Batter

Mix vanilla extract, sugar and cream cheese until smooth.

Whip the cream in order to make a chantilly (without sugar !). And add it to the cream cheese mixture with a spatula.

Melt separately the 3 chocolates.

Pour the cream cheese batter in 3 bowls adding the same quantity in each one.

Add the melted dark chocolate in one bowl. Combine.

Pour the filling into the crust; smooth the top with a rubber spatula.

Add the melted milk chocolate to the second bowl. Combine.

Pour the filling on top of the dark chocolate batter layer; smooth the top with a rubber spatula.

Add the melted white chocolate to the third bowl. Combine.

Pour the filling on top of the milk chocolate batter layer; smooth the top with a rubber spatula.

Set aside in your fridge for 3 hours.

When serving, add your topping of choice.

    Grand succès hier au dessert! Facile et rapide! Sans cuisson c’est juste top en été. J’ai eu un peu de mal au démoulage cela dit… un conseil?

      Merci Cécile ! Idéalement il faut mettre du Rhodoïd. Et passer un couteau contre le bord avant de démouler.
