Leek and Feta Cheese Puffs
- Leek fondue
- 1/2 onion
- 1 large leek
- 10 g butter
- 1/2 tsp mascarpone (or heavy cream)
- 4 square puff pastries
- 100 g feta cheese
- 1 slice of ham
- Ground nutmeg
- 1 egg
Mince the onion.
Clean and cut the leek.
Melt the butter in a sauce pan.
Add the onion and the leek.
Add salt and cook for 20 minutes with lid, mix from time to time.
Remove from the stove and add the mascarpone. Combine and set aside.
Preheat your oven at 210 C / 410 F degrees.
Cut the feta cheese and ham in small cubes.
Add to the leek fondue and combine.
Adjust seasoning with salt, pepper and ground nutmeg.
Place your pastries on a baking tray covered with parchment paper.
Pour a generous tablespoon of leek fondue in the center.
Fold the corners of the pastry to the center and close your puffs.
Brush with the beaten egg.
Bake for 25 minutes.
