- 155 g butter at room temperature
- 90 g brown sugar
- 55 g cater sugar
- 1 egg
- 1 egg yolk
- 70 g ground almond
- 185 g flour
- 1/2 teaspoon baking soda
Whisk the butter in your food processor bowl until you get a smooth texture.
Add the brown and caster sugar, whisk until it whitens.
Add the egg yolk, mix.
Beat the egg a few seconds with a fork, pour half of it in the bowl and set aside the other half.
Mix some more.
Finally, pour the flour, ground almond and baking soda.
Mix until homogeneous.
Make a ball, place in a cling film and set aside in your fridge for 2 hours.
Preheat your oven at 180 C / 355 F degrees.
Spread the pastry between two baking sheets, shape with cookie cutters.
Spread with the remaining beaten egg (add milk if you don't have enough).
Make cuts with a fork or knife for decoration.
Cook 10 minutes.
Let cool down on a grid and store in a metal box.
