Yes, I’m in a fantastic mood today because I had the most amazing and easy to make avocado and scrambled toast for breakfast!!

Avocado and Scrambled Egg Toast

Ingredients

  • 2 slices of bread
  • 1/2 avocado
  • 2 tsp olive oil
  • 1 egg
  • 1/4 tsp curcuma
  • 2 pinches flower salt
  • A few coriander leaves
  • 1 pinch sesame seeds
  • Pepper

Instructions

Heat 1 tsp oil in a small frying pan.

Add the beaten egg, 1 pinch flower salt, curcuma and pepper.

Cook the egg until scrambled. Set aside.

Spread the second tsp of oil on your 2 slices of bread.

Spread flower salt. Add the avocado cut in slices.

Add the scrambled on top, add more pepper, spread sesame seeds and coriander leaves.

Serve!
