Fall Endive Salad

Hello my lovelies!

Today, I will share a special recipe with you! Not that it is special by its content but more by the way I got to cooking it…

Let me explain…

I’m happy to be an active member of a Facebook group called “Dis, maman, c’est quoi le dîner ?” (understand “Hey, Mummy, what’s for dinner?”). Mothers (and a few fathers) share their ideas of meals, desserts, they help each other with advice and food ideas.

I was looking for an original idea to make a good endive salad so I just asked … As a result : an incredible flow of ideas, creativity, healthy ingredients! I could suggest at least 4 or 5 recipes, but I made only one so far (I have now tons of ideas!!). I don’t know if collaborative cooking is a thing already, but it is amazing!

This recipe turned out to be so good, so tasty and surprising that I decided to share it with you. Simple, but outstanding!!

So before moving to the part where I explain the details of this healthy, sweet and savory recipe, I would like to take a moment and thank all those mothers, those daily wonderwomen that helped me out!!

Fall Endive Salad

Cooking Time: 15 min

Ingredients

  • 2 endives
  • 1 avocado
  • 1/2 apple
  • 1 clementine
  • 40 g Comte cheese
  • 1 small handful of pine pinion
  • Yuzu and Thai basil olive oil (or olive oil)
  • Salt
  • Pepper
  • Ground ginger

Instructions

Cut the clementine in half and squeeze one half, set the juice aside.

Peel the other half, set the segments aside.

Clean the endives, remove the bitter part and cut them in slices.

Cut the apple (I keep the skin for the vitamins and the color it brings to the dish), the avocado and Comte cheese.

Place your ingredients in a bowl or in two plates.

Prepare the sauce with the clementine juice, the olive oil, salt, pepper and ground ginger.

Pour on your salad.

Notes

You can make numerous variations. Here are just a few extra ingredients that have been suggested to me: grilled chicken, walnuts, smoked salmon, raisin, beetroot, orange, bacon, eggs, gruyere cheese, smoked duck, Pomegranate fruit, mango, potatoes, pear, gouda cheese, feta cheese, cantal cheese, pink berries, roquefort cheese, capers and banana! So many ways to have fun, don't you think? 😉
