Roasted Butternut with Orange and Stracciatella
- 1 burrata (150 g)
- 80 g liquid cream
- Roasted butternut
- 1/2 butternut
- 1/2 orange
- 2 tbsp olive oil
- 4 slices of bread
- 1/2 tsp sumac or paprika
- A few coriander leaves
Crush the burrata with a fork.
Add the cream and combine.
Set aside in your fridge.
Preheat your oven at 200 C / 390 F degrees.
Peel and cut the butternut in cubes.
Place them on a baking tray covered with parchment paper.
Pour the orange juice and olive oil.
Spread salt and pepper.
Cook for 20 minutes.
Spread sumac, salt, pepper and chopped coriander on the Straciatella.
Serve the Straciatella with cubes of roasted butternut rôtie and bread.
