Large Zucchini Ravioli with Tomato

Ingredients

  • 2 zucchinis
  • 300 g cream cheese
  • 1 heirloom tomato
  • 50 g preserved cherry tomatoes
  • A few chive stalks
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 200 g tomato sauce
  • Salt
  • Pepper

Instructions

Preheat your oven at 200 C / 390 F degrees.

Make thin slices of zucchini with a peeler. Set aside.

Combine cream cheese, the tomato cut in small cubes, the preserved cherry tomatoes, chopped chive and paprika.

Add salt and pepper.

Use a 7 or 8 cm diameter pastry ring, place zucchini slices.

Pour a tablespoon of cream cheese mixture in the center and fold the zucchini slices.

Start again until all zucchinis and cream cheese is used.

Place your large zucchini raviolis in a gratin dish, add the tomato sauce.

Add more salt, pepper and olive oil.

Cook 30 minutes.
