Butternut squash

Hey there ! How are you today ?

I’m in a cocooning mode. I feel like staying quite close to my fireplace (though I don’t have one !!). Too cold outside, I need a warm and cosy atmosphere.

So how bad is it Doc ? Well, my perfect answer is simple : butternut squash.

Definitely, it is my favorite soup during winter. Soft, delicate, tasty, quite sweet which makes it perfect for the kids. Besides, you can add bacon or even foie gras for a simple but stunning starter !

Come on ! Don’t waste any more time . Let’s eat soup !!

Ingredients

  • 1 kg butternut (or pumpkin)
  • 2 carrots
  • A pat of butter
  • 10 cl cream
  • 40 cl water
  • 1 cube of dehydrated chicken broth
  • ground cumin
  • 1/2 tea spoon of salt
  • Pepper

Instructions

Peel the carrots and butternut, cut them into 2-3cm (1-inch) cubes.

Place the cubes in a heated frying pan with the butter for around 5 minutes.

If you have a Thermomix machine, put the vegetables in your bowl with the water, the dehydrated chicken broth, the ground cumin and the salt. Set your Thermomix on 100°C, 20 minutes and speed 1,5. When it's done, add the cream and a bit of pepper. Set you Thermomix on 10 seconds and speed 4. There you go ! Bon appetite !

If you don't have a Thermomix machine, put the vegetables in a pan with the water, the dehydrated chicken broth, the ground cumin and the salt. Cook for around 20-25 minutes until the vegetables cubes soften. Blend, add the cream and season with pepper. And serve !

Notes

You can also add bacon on top of your soup just before serving. Even better, add small pieces of foie gras and you will have a starter with a pinch of gastronomy ! If your soup is too compact, just add a bit of water until you have the right texture.

    Recette testée et approuvée que ce soit par mon fils de 2 ans “miam miam maman” ou par mon mari qui en a repris…et moi je l’ai A-DO-REE! Elle a le petit truc en plus qui vous fait succomber! Un grand merci

    je decouvre votre blog avec grand plaisir et je vais vite tester certaines de vos recettes, sans doute la tarte aux pommes à l’américaine pour ce week end ! Pouvez vous nous donner votre “truc” pour obtenir cette jolie décoration sur le velouté ? Merci beaucoup

      Oh merci beaucoup !! Alors j’avais posté une vidéo sur mon compte FB il y a un an ou deux … en gros je fais des gouttes de crème puis je passe délicatement une lame ou un pic en bois à travers chaque goutte 😉
